St. Andre, Cranberry white stilton, Humbolt fog smoked cheddar, Aged yellow cheddar presented with seedless grapes, sugared blueberries, candied pecans & chestnuts, lavash crackers, baguette, fig jam and local thyme honey
Organic Greens Salad
Crisp buttery pears, pomegranate aires, caramelized almonds, dried figs, gorgonzola, rosemary croutons & port wine vinaigrette
Grilled Asparagus Slaw
White & Green Asparagus, roasted red bell peppers, snow peas and Napa cabbage tossed in a truffle sherry vinaigrette
The Gran Padano Bianco Risotto Station
Italian Arborio rice skillet simmered with roasted garlic, white & green asparagus, pulled chicken breast, white truffle poached mushrooms with shards of Padno Parmesan
Crown Roast of Pork
Stuffed with hazelnuts, dried fruit and served with tart apple & jicama slaw with figs. Sauced with Calvados cream and offered with petite white cheddar and bacon bread pudding
Herb Roasted Sirloin of Beef
Slow roasted beef offered with horseradish cream, creole mustard and shitake mushroom jus accompanied by petite sandwich buns.
Farm Rasied Fillets of Basa
Oven baked & encrusted with mixed citrus panko seved with julienne root vegetables and finished with orange ginger beurre blanc
Winter Harvest Vegetables
Green beans, butternut squash, broccoli & cauliflower tossed in a garlic-chive butter

Chocolate & Vanilla- Vanilla custard filled profiteroles dipped in dark semi-sweet chocolate
